For the past month or so we have been enjoying meatless Monday dinners. We are loving these veggie bowls and they have so much of the good stuff in them. The best part is this meal is totally customizable! If you don't have something you can easily replace it with something else. This is a meal that will make you feel good about what you're eating and it taste great too!


  • You can totally skip the rice and make a full on veggie bowl. We love to use the sweet potatoes as a base!

  • I like to use my Honey Lemon Salad Dressing on this bowl.

  • I use crumbled goat cheese but feta is good too!

  • Sometimes I'll add broccoli instead of Brussels sprouts.
